These days before the New Year (and during) Christmas we still have some special recipes  (the Christmas season is too short)  Here is the dessert I made for Christmas Eve. A ricotta and mascarpone cheese semifreddo with dry fruits  with dark chocolate glaze. We had  for Christmas  orange roasted turkey, salads, and  baked salmon in puff pastry (Esperanza eats fish) and this nice dessert. Super delicious. We were just the four of us, and I missed my mom who was with us last year. Anyway it was a nice Christmas .. Level: Easy Total: 1 hr 15 min Prep: 15 min Cook: 1 hr Yield: 4 to 6 servings Ingredients 1/2 cup sugar 2 tablespoons all-purpose flour 3 eggs, beaten 1 1/2 cups peeled, chopped, and toasted hazelnuts 8 ounces bittersweet chocolate chips (about 1 cup) 1 cup corn syrup 2 tablespoons butter, melted 1 teaspoon vanilla extract 1/4 teaspoon salt 1 store bought frozen pie crust, defrosted Directions 1. This dish comes together quickly when you have a well-stocked larder with labneh, chickpeas, and pita chips. I like to make these regularly and keep them on hand at all times! You can use peeled chickpeas, my favorite, but from dry or canned will work fine here too. Add fried eggplant, roasted chicken or lamb for extra oomph. This one is soaked in simple syrup scented with flower waters, and is my version of a wonderful cake made by my friend Suzy at The Mediteranean Dish. For the decoration, I was inspired by the beautiful rose cake at Saveur. Be sure to use unsprayed roses, or any unsprayed edible flower. Alternatively, decorate the cake with just the toasted coconut. Serve small pieces with strong coffee--this is a very sweet cake! Pita Crisps with Labne & Za’atar Recipe

Ingredients Pita bread, thin or thick style Labne or thickened Greek yogurt Extra virgin olive oil Za’atar Instructions Preheat oven to 400 degrees. Cut pita into 2” triangles and separate into one layer. Place on baking sheet and toast to golden brown, about 4 minutes for thin pita and 7 minutes for thick pita. Watch them closely because they can burn in a heartbeat. Place a dollop of labne on each chip. Drizzle with olive oil. Sprinkle za’atar over the top. Alternately, place labne in a small bowl and sprinkle with za’atar. Place on a platter and surround with pita crisps, also sprinkled with za’atar, and serve as a dip.

And finally here we are with Christmas just around the corner. I always feel that Christmas overcomes me but I love Christmas despite everything. I made these brownies because I loved that they have Christmas spices so  smell wonderful. Gingerbread men are edible,  and you can buy  them on Amazon.
