When we were youthful angels Molly's father would go to the market and stock up on Rocky Road. When I was growing up, Djaj Mahshi was an absolute favorite of mine. I remember the excitement when my mother would remove the juicy chicken from the oven and we would all wait impatiently at the dinner table. I used to watch my mother cut through the chicken and see all the rice and nuts released. In Palestine, stuffed chicken is a staple dish that is always on offer during festive times. Full of fragrant spices and flavor, it’s wonderful to eat with a side of plain yogurt and salad. Fava beans and Rice (Rez bel fool)

Ingredients: 1 1/2 cups rice 1 kilo green fava beans (Fool akhdar) 1/4 kilo of (lean) meat 1 cup of cooking fat 1 big onion Salt to taste Pepper to taste Pinch of cinnamon  Preparation: 1. Clean the Fava beans (Fool) with water very well. 2. Mince the meat using the mincing machine. 3. Chop the onion finely. 4. Fry the onions using the cooking fat until it becomes lightly brown. 5. Put the minced meat over it and cook until well done. 6. Add the Fava beans (Fool) and mix until it becomes slightly yellow. 7. Add the the Salt , Pepper and cinnamon and mix very well. 8. Add the water over the mixture until it is totally drawned (1 cm. over the top of the mixture). 9. Cook for 15 minutes over a medium fire. 10. Clean the rice and pour it over the mixture. 11. Cook over a high flame until it starts boiling. 12. Reduce the flame to low until the rice is well done. 13. Do not let the rice get totaly dry keep it moistened a bit. 14. Serve with yogurt.

In previous posts I used the Swiss Chard to make the soup with lentils, and Mutabbal made out of Swiss chard stalk. But today I prepared the traditional stuffed Swiss chard, which is an alternative to stuffed vine leaves. It  is a vegetarian recipe cooked with extra virgin olive oil. Ingredients: 2 cups green lentils 2 liters of water 3 garlic cloves 3 medium sized potatoes, peeled and diced 1 kg Silik (Swiss chard) 1 tablespoon dried mint 1 tablespoon sunflower oil Juice of 2 lemons salt & pepper Preparation: 1. Wash then boil the lentils in a pot with the water 2. Wash the Swiss chard, and cut off the leaves, then chop them into thin strips. Keep the stems aside for another recipe 3. After 20mins of cooking the lentils add the potatoes 4. When the water starts to boil, lower the fire and leave to simmer 5. After another 20mins add the chopped leaves to the pot and cook for about 7 more mins 6. Peel the garlic and crush with salt and mint 7.
