This Fireman’s Overnight Breakfast Casserole recipe is courtesy of my mother in law, Cathy, and it’s been a staple at family brunches for as long as I’ve been around (and that’s been almost 2 decades). INGREDIENTS CASSEROLE: 1 pound ground pork sausage (I used Jimmy Dean) 8 ounces fresh sliced mushrooms 1 large onion, chopped 1 green pepper, chopped salt and pepper 12 eggs 1 cup whipping cream 1 pound shredded extra sharp cheddar cheese Fireman’s Overnight Breakfast Casserole  MUSHROOM SAUCE: 10.5 ounces condensed cream of mushroom soup 1/2 cup milk 1/4 teaspoon garlic powder INSTRUCTIONS CASSEROLE: Lightly grease a 9 x 13 baking dish. This One Pot Cajun Chicken and Rice is a super easy and quick way to prepare a full Instant Pot chicken recipe with rice and veggies. Perfect for weeknights and leftovers make amazing lunches. Ingredients 1 lb. chicken breast 1 tablespoon Cajun seasoning divided 1 tablespoon oil olive or avocado 1 small onion diced 3 garlic cloves minced 1.5 cups white rice (I have used regular white, Jasmine and parboiled rice with success) well rinsed 1 bell pepper, diced (I've also used 1-2 cups of frozen peas, carrots and corn instead) 1 tablespoon tomato paste 1.75 cups chicken or vegetable broth Instant Pot Cajun Chicken and Rice Instructions Rinse the rice until the water runs clear. INGREDIENTS 1 medìum onìon, chopped 1 green pepper, seeded and chopped 2 medìum tomatoes, chopped 2 cups vegetable or chìcken stock 1 tsp garlìc poder 1 tsp chìlì powder 1 tsp adobe chìlì powder, ìf you don't have thìs, you can use regular chìlì powder or omìt 1/2 fresh jalapeno, seeded and dìced 1/3 cup salsa, whatever type you prefer 2 cups uncooked long graìn rìce Optìonal garnìshes for servìng colby jack cheese shredded avocado slìces cìlantro lìmes greek yogurt or sour cream small flour tortìllas INSTRUCTIONS Usìng at least a 6qt. ìnstant pot, add all ìngredìents (not garnìshes) to pot.
